Cheesy Mashed Potato Puffs
These fluffy and cheesy mashed potato puffs are the perfect comfort food! Packed with cheesy goodness and a soft, pillowy texture, they make for a delicious side dish or a fun snack.
Ingredients:
- 3 cups mashed potatoes (leftover works great!)
- 1/2 cup shredded cheddar cheese
- 1 egg
- 2 tablespoons chives, chopped
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine mashed potatoes, cheddar cheese, egg, chives, garlic powder, salt, and pepper. Mix well.
- Grease a muffin tin or line it with muffin liners. Spoon the potato mixture into the muffin tin, filling each cup about 3/4 full.
- Sprinkle grated Parmesan cheese on top of each puff.
- Bake for 20-25 minutes, or until the tops are golden and crispy.
- Remove from the oven and let cool slightly before serving. Enjoy!
